Inn the News at Onion Creek...


Inn Above Onion Creek Video On-line!!

We recently added a new video on our home page that highlights the amenities at the Inn and some of the popular attractions in the area, including some great footage of Wimberley Zipline Adventures and Wimberley Glassworks. Be sure and check it out, the video might show you some things to try out during your next visit. The four and half minute video was shot in HD and is narrated by our very own innkeeper, Amy Dolan. Be sure and watch till the end where we have some great “time-lapses” of clouds rolling by and beautiful sunsets.

Toll-road 130 is now completed, the new by-pass around Austin, which starts in Georgetown and reconnects to I-35 in Buda is designed to help travelers miss the Austin rush-hour traffic. Guests that are traveling South on I-35 to get to the Inn might want to bring some extra quarters and take the toll road; it might just help you make dinner on time!

Cold Cucumber Soup

Yield 2 1/2 quarts; 8 to 10 servings

Ingredients
• 6 pounds cucumbers (about 6 cucumbers), peeled, seeded, and coarsely chopped (12 cups)
• 2 yellow bell peppers, stem and seeds removed, coarsely chopped
• 4 green onions, chopped
• 2 jalapeno peppers, minced
• 2 tablespoons finely chopped fresh cilantro
• 1 tablespoon finely chopped fresh mint
• 1 tablespoon finely chopped fresh dill
• 3 to 4 garlic cloves, mashed to a paste with 1 teaspoon salt
• 1 1/2 teaspoons salt
• 1/2 teaspoon cayenne pepper
• 3 cups plain yogurt
• 3 cups sour cream, divided
• 3 tablespoons extra-virgin olive oil
• 2 teaspoons white wine vinegar
• 2 tablespoons minced fresh chives

Directions
Combine the cucumbers, bell peppers, green onions, jalapenos, cilantro, mint, dill, garlic, salt, cayenne, yogurt, 2 cups sour cream, olive oil, and white wine vinegar in a large bowl. Working in batches, puree the ingredients in a blender until very smooth. Transfer the soup to the refrigerator until well chilled, at least 2 hours. Taste and adjust the seasoning if necessary. Serve the soup, with each bowl garnished with a dollop of the remaining sour cream and some of the minced chives.

What's New at Hill Country RV Resort & Cottage Rentals!



Lots of exciting changes have been occurring at Hill Country RV Resort & Cottage Rentals.

We now have a playscape for the younger kids to play on, having just been installed. Additionally, we have upgraded our web site and we now have a video for each of our cottages, along with numerous pictures. Please click here and take a tour of the new site. We hope you enjoy it!



We are in the process of adding some vending machines, as well as video games and another pool table for your enjoyment this summer. We hope to have these installed by the end of May.

We also have added on our web site a video of the area attractions in and near New Braunfels. Click here to view.


Once again, we have partnered with both Schlitterbahn and Rockin’ R River Rides. Once you reserve a cottage at Hill Country, we can offer a discount pass to Schlitterbahn, which will save you about 12.5% off the price of an admissions ticket. Rockin' R has a shuttle service that will pick you up and return to Hill Country. While in most cases this does require a 24 hour advance reservation, the shuttle fee also includes a tube rental. Or you can take a short drive to one of their many locations.

LBCC's First Annual Golf Tournament

Benefit Golf Tournament Postponed until June 6th

Rain on Saturday, May 16 caused the postponement of the Lake Buchanan Conservation
Corporation’s First Annual Golf Tournament at Delaware Springs Golf Course in Burnet, TX. It will now be held on June 6, 2009 at 1 PM. The event will be a Shotgun Start, Four Person Scramble. The cost is $50.00 per player. This includes; Green Fees, Carts, Range Balls, Prizes and a Lunch Buffet. Many local and national organizations have signed on as Hole and Board sponsors. Registrations can be as late as the morning of the event. To sign up, contact Frank Brossett at 512‐234‐0011 or George Bold at 325‐379‐1553.

All proceeds will be used to improve Lake Buchanan. Since 2006, the LBCC has stocked the lake
with over 5 million fish and created 14 brush pile fish habitats.

The Lake Buchanan Conservation Corporation is an independent non‐profit corporation
dedicated to maintaining and improving the effectiveness of Lake Buchanan as a recreational
area for all who wish to use it.

The kayaks are coming...


THE KAYAKS ARE COMING, THE KAYAKS ARE COMING!



"GCKR" IS FINE IN 2009"


It's 2009 and the kayaks are coming again! Jump in a kayak, dance at the concert or volunteer for The Great Castell Kayak Race June 6th, 2009 to raise money to benefit the Lance Armstrong Foundation and ("gicker") GCKR .This is the seventh year of the race and it has become a Hill Country tradition. The Llano River is Texas' cleanest and wildest river, flowing through some of the most historic portions of central Texas. Organizers distribute bags donated by LCRA for trash clean up for all (so those who decide to mosey down the river can do a good deed). Even though this is a "race" many folks participate to help with the cause and for a nice family day. Many serious boaters do the GCKR race to practice for the Texas Safari later in the month of June.

The race begins at the 87 river bridge over the lovely Llano River on Saturday June 6th, 2009, at 8 AM and The Llano river RV Park hosts the put in. Pre-registration fee is $40and includes t-shirt, bandana, snacks, free live music concert starring the Dust Devils and much more. Raffle for gift baskets $5 per ticket!

There is a free music concert all day at Riversounds at the finish line featuring Texas Songwriters in the Round, Daniel Link, the Dust Devils and more. The race founder, Jerialice, is a musician and wanted to provide some live original Texas music at this event as an addition to the fun aspects of the fundraiser. There will be opportunities for folks to donate at the music concert which begins at 11 AM at the finish line. The music is being generously supported by "KFAN FM Texas Rebel Radio" and Mitchell Planning Group LLC to help raise as much money as possible.

This year KXAN/CW of Austin Texas is a major media sponsor and will help spread the word all over central Texas. Organizers are appreciative to have so much support from all the media of their region.The Race is proud to announce Scott & White and Llano Memorial Health Care System, two regional medical facilities that are very involved in community efforts and the fight against cancer, as new underwriters.

The race has a new 501-c3 foundation, GCKR, in Castell where the race ends every year from it's starting point in Mason County. The first five years the beneficiary of the 12 mile race rotated until Jerialice Arsenault, founder and Director, lost her sister Judith Curtis to cancer in 2007. After that, she and her surviving sister, Janice Ramalho agreed to try to help others.

The hope of the Race is to raise awareness of needs in the rural areas and to bring together the elements for healing. GCKR will focus on writing grants in place of the yearly auction. 100% of all donations will go to the foundation in lieu of the auction. In years past, the auction raised the majority of the funds, so some changes will be happening over the next year as the board members paddle down new waters!

Roots Music Concert - Bluegrass

The Pioneer Museum brings world-class bluegrass music to a hometown setting for the season’s first Roots Music Concert

Saturday, May 16, 2009. Gates open at 5 p.m., with the music running from 6:00 to 10:00 p.m.

The Pioneer Museum is located at 325 West Main Street in Fredericksburg, with concert entrance on Milam Street.
